About the Position

Position is directly responsible for managing all catering functions and retail operations.  Oversees staff to ensure proper set-up/clean-up of all retail venues and catering functions, prepping all food items (i.e. salads, deli platters, beverages, etc.), organizing, prioritizing and scheduling catering events, communicating any catering changes and maintaining cleanliness/orderliness in catering work area and pantry.  The catering and retail manager is responsible for the billing and payment of all catered events including pricing as well as inventory management of the Fillmore Lounge and Market. Manages and oversees retail venues to attain revenue goals per fiscal year budget. 

This position is 11am-7pm Thursday-Sunday

Job Duties

  •  Manages departmental activities including retail venues and catered events (e.g., meal service, food production, catering activities, tray service, and merchandising).  
  • Designs and implements programs and special projects planned to provide quality service, food and dining experiences to residents and their families, as well as guests, and staff.

  • Monitors the scheduling and job activities of retail and catering staff to ensure all events are set up and ready at scheduled time, ensuring all events and venues reflect departmental standards of high quality, pristine appearance, and customer comfort.

  • Responsible for cash handling and record keeping for retail operations and catering functions, always maintaining standards and alignment with policies and procedures to mitigate risk and theft of services or company funds.

  • Completes all daily and weekly reports as outlined in the department policies and procedures on a timely basis meeting all prescribed deadlines. 

  • Provides direct input to anticipating, planning, monitoring, and evaluating cost programs to include daily purchasing and maintenance of food preparation system, order book, recipe files, inventory, and storerooms, as assigned. 

  • Assists with menu and product development for retail venues, Fillmore Lounge and Bistro, as well as menu planning, writing, and advertising, meeting routinely with the Marketing and Communications team.

  • Supports the Dining Services Director with interviewing, hiring, and onboarding, orienting, training, evaluating and counseling of all staff along with any relevant documentation.

Job Requirements

  •  High School graduate or equivalent required.  
  • Must have some experience with financial and operations management.

    • One year of commercial cooking experience required. 

    • One year of catering experience preferred. 

    • Must be a strong communicator in English, both written and verbal, and possess basic math skills.

    • Team management experience highly preferred. 

    • Skills in basic knife handling and ability to utilize oven, dish machine, and meat slicer highly preferred. 

    • Skills in organization and priority management are essential.
