The Modern is looking for a Pastry Sous Chef to join the team! 

The Modern celebrates 3 starts NYT, 2 Starts Michelin, and 2016 Wine Spectator Grand award. The Modern is part of Danny meyer's Union Square Hospitality Group. 

 

The ideal candidate

The Pastry Sous Chef is responsible for menu and recipe development of The Modern and the Cafes at MoMA. This includes plated desserts, bread baking and high-volume pastry production. This candidate is expected to develop an understanding of food cost and labor cost and how it reflects in the daily production of their Pastry Cooks. They are to cultivate relationships with purveyors and understand ordering of products and inventory procedures. The Pastry Sous Chef will also be responsible, in partnership with the Executive Pastry Chef, to foster team spirit and relationships between each other in order to create comradery and a strong, positive and supportive working environment. The Pastry Sous Chef will assist to oversee the overall running of the kitchen, cleanliness and organization.
 
Some responsibilities include but are not limited to:
• Responsible for assisting all aspects of managing Pastry Kitchen operations
• Maintaining a proper line set up for all service periods
• Assist in hiring and training all new Pastry Cooks that join the team
• Maintaining appropriate production quantities and standards
• Menu development and recipe testing
• Proper handling and storage of all product
 

 





Skills/Requirements
• Possess strong leadership skills
• At least 2-3 years experience in a fine-dining restaurant
• Possess strong leadership and people skills
• At least 2-3 years experience in a fine-dining restaurant
• Ability to properly train new staff
• Ability to perform assigned duties with attention to detail, speed, and accuracy
• Ability to work well under pressure and handle multiple tasks at once
• Punctuality and reliable attendance
