Union Square Events is looking for an Executive Sous Chef at Conrad Hotel

The Executive Sous Chef at Conrad New York is responsible for daily culinary operations at CNY. This strong leader is responsible for building a high performance team that delivers culinary, operational and financial excellence for all events. He or she must build and foster strong relationships between USE, CNY Hilton/Goldman Sachs and our many clients and guests. The Executive Sous Chef will also ensure there is consistent and clear collaboration and communication for all needs from 640 west 28th Street commissary, partnering with USE’s senior culinary leadership.  

Foster healthy and positive relationships between USE, CNY and Goldman Sachs
Collaborate with Conrad Sales team in coordinating information to develop and execute BEO and menu presentations
Serve as a liaison between the Conrad Sales team, the USE FOH and Culinary Management team ensuring clear and consistent communication is executed through all stages of the event cycle
Weekly BOH meeting with USE 28th Team / relationship with 28th street team for 
Partner with USE purchasing manager ensuring all food and beverages ordered are specific to USE’s preferred vendors and partners
 
 
Liaise with USE culinary Leadership team to ensure excellence in menu planning, ordering, production and execution
Partner with USE Executive Chef to ensure a seamless and consistent culinary voice is that of USE’s other businesses
Ensure seasonal menu timeline and tastings are followed and communicate needs in a timely manner
Provide feedback of any and all menus & events and communicate to entire culinary management team at CNY and USE 28th Street
Collaborate with USE purchasing manager to ensure items and needs for menus and events meet USE standards 
 
Increase accuracy, quality and continuity of our day to day operations by creating and maintain essential operating systems
Forecasting and Monitoring Food Purchases and Labor Schedules
Checking a Conrad BEO for accuracy (Correct Menu items, Pricing, Guarantee, Date, Time, and Dietary Restrictions)
Oversee BOH Staffing needs, Modifying Conrad Staffing Matrix and Forecasting and Staffing In-house and Agency Staff for event Event/CIS #
Collaborating with Purchasing manager to place food order requests in IMS 
Monitor Inventory – Review for accuracy – relationship to Food Cost/waste
Utilize Bread Helper for Pastry and Bread Ordering 
Create Conrad portion guide to create standard ordering procedures for menu items
Creating menu items for an event from a CNY BEO 
 
Continuously build a high performance team
Execute weekly BOH meetings, providing updates, feedback and outlooks
Ensure BOH org charts and communication is consistent and timely of each positions daily responsibilities
 

 





Skills/Requirements
Technical: 
Strong Computer Skills/Microsoft Office (Excel, Word, Outlook, Power Point) 
Excellent knife skills
Advanced experience in cooking techniques
Basic knowledge of kitchen machinery and maintenance
 
Language: 
English 
 
Experience: 
5 + years of experience in culinary management
 
Certifications: 
Culinary Degree from an accredited school
NYC Food Handler’s Certificate 
 
Work Environment:
Must be able to stand, reach with arms and hands, bend and stoop, kneel and crouch more than 50% of the time. 
Must also possess the ability to taste and respond to visual and aural cues; must be able to verbally communicate with employees and guest at all times. 
Lifting requirements range from being able to lift between 10 and 50 lbs more than 50% of the time.
