Job Description

 

Helmed by Chef Michael Anthony of Gramercy Tavern, Untitled features Chef Anthony’s acclaimed, deeply seasonal style of contemporary American cooking. The light-filled, airy restaurant, adjacent to the High Line, is inspired by the boldly creative environment of the world-class museum it calls home. Untitled is open daily for lunch and dinner, with a ground floor entrance on Gansevoort Street.

We are seeking a Sous Chef to join the team! The Sous Chef works closely with the Executive Chef to maintain the highest quality and standards in the daily operations of the kitchen. This includes management of the Line Cooks, Prep Cooks, and all hourly team members. The Sous Chef ensures that all pars are met in the prep kitchen and oversees execution of the menus throughout lunch and dinner service daily.

Skills/Requirements

  • Ensure high performance and maintain overall excellence & hospitality throughout each day’s specific service periods.
  • Ensure that all recipes, product, food preparations and food execution meet restaurant's specifications and commitment to culinary excellence.
  • To the highest degree possible, ensure that kitchen & physical plant is kept clean, safe and up to all “A” level health code standardsEnsure knowledge of and adherence to all applicable laws, policies and procedures
  • Continuously build a high performance team


Requisite Knowledge:

  • At least 3 years BOH management experience in hospitality & fine dining, previous prep or line cook experience required
  • Excellent understanding of professional cooking and knife handling skills
  • Excellent knowledge and understanding of safety, sanitation, and food handling procedures.

Physical Demands:

Involves standing for extended periods of time, as well as climbing stairs repeatedly.
Involves repeated reaching with arms and hands, and carrying objects less than 20lbs and bending and stooping.
Must be able to lift 20 lbs, bend and stoop.
