Job Description

Snowbird is looking for a sous chef at our flagship restaurant, The Aerie, providing exquisite Modern-American Gastropub Cuisine. The Aerie focuses on local, seasonal and organic ingredients, as well as an award-winning wine list with over 1,000 wines. The recently renovated Aerie features a Cafe Lounge, Sushi Bar, Main Dining Room and Private Function Space. It sits on the top floor of the Cliff Lodge featuring breathtaking mountain views, live entertainment, and daily après-ski specials. We are looking for an experienced sous chef willing to take on a new challenge and join our fantastic, dedicated staff.

Purpose
Under the direction of the Executive Chef
To assist the chef in providing quality food to guests in Snowbird high volume or fine dining restaurants while continuously striving to decrease costs, by managing a meal shift and overseeing the kitchen operations in the chef’s absence.   

Position Functions / Areas of Responsibility
1.  Reports to work on time in the proper uniform. Obeys all company rules and regulations.
2.  Assists Chef in providing directional flow of kitchen during prep and service.
3.  Manages kitchen operations. Oversees all kitchen staff during meal shifts including work assignments, work performance and quality.
4.  Assists Chef in planning and supervising all work done by kitchen employees.
5.  Works with Chef to oversee and evaluate employee work performance. Recommends promotion, transfer or termination of employees based on performance evaluation.
6.  Responsible for food cost, kitchen labor and all kitchen operating expenses.
7.  Works with Chef to design menus and create recipes.
8.  Ensures standards of appearance and sanitation are maintained on a daily basis. Maintains good safety practices of employees throughout the kitchen.
9.  Responsible for ordering, receipt and storage of all kitchen equipment including FFE, to ensure a minimum loss from waste or theft.
10.  Maintains daily records including daily sales and payroll and is responsible for monthly profit and loss statements. Completes nightly reports. Reviews daily sales. Adjusts scheduling according to labor and sales figures.
11. Works with Chef to provide ongoing employee training.  
12. Takes fast and appropriate action to solve problems. Handles guest concerns in a professional manner.
13. Maintains line of communication between Bar, Dining Room and Administrative Office.

Education & Experience Requirements
1.  High School Diploma or equivalent required.
2.  2-4 years of job-specific work experience with demonstrated competence.

Specific Requirements:
1.  Food Handler Permit

Skills & Knowledge
Technical:    
Must demonstrate competency in reading, writing and arithmetic with accuracy in counting, adding, subtracting, multiplying and dividing. Must demonstrate ability to design and price menus and recipes. Must demonstrate proficiency in handling all kitchen equipment. Must demonstrate ability to multi-task, e.g., direct staff activities while maintaining interactions between the dining room and the bar. Must demonstrate ability to prepare and analyze monthly financial statements. Must demonstrate strong interpersonal skills, listening and oral communication skills, conflict management and dispute resolution skills. Must demonstrate ability to lead, motivate, develop and counsel employees

Administrative:    
Requires exercise of judgment within policy guidelines and without supervisory approval. Requires ability to independently direct and manage the employees, including training, coaching and correcting. Requires problem solving and initiation of activities within job description and responsibility limitations. Requires strong understanding of other Snowbird operations.

Working Conditions
Work Schedule:
1.  Shifts vary, may be early morning or late evening, weekends, holidays, depending on business levels.
    
Mental:
1.  Must be prepared to stay overnight if necessary on occasional times of road closures.
2.  May experience unusual stress from high business volumes, deadlines, continual work with public, winter conditions, snow night requirements and commuting to/from Snowbird.

Physical:
1.  Must be able to lift 25+ lbs.
2.  Must be able to carry trays and other items needed for service.
3.  Must be able to stand for long periods of time.
4. Must demonstrate ability to bend, kneel, handle, reach, grasp and perform repetitive motions.
5.  Work is subject to frequent interruptions making continuity and accuracy difficult, frequent exposure to noise.
